We're on vacaton this week in Vermont (brrrr). As I was taking ski lessons the other day, I noticed the amount of families and I couldn't help but think what our vacations will be like when we eventually start a family. But, for right now, it's just us.
After being bundled up outside all day, the only thing on my mind was hot chocolate, a movie and bundled up under a blanket. You see, Chris has at least 600 movies in his collection. I'm not kidding. It's unreal. Anytime we're at Target (at least twice a week), we always seem to leave with another movie. Earlier this week it was Big Hero 6.
I'm a sucker for Disney movies so I may be biased but this one made it to the top of our list. I could watch this over and over again. There's something about Disney movies that takes you back to your childhood: Cinderella anyone?

Extra crispy on the outside and tender on the inside. Easy and insanely delicious baked onion rings -- a healthier version of the classic.
There are very few things that make me more giddy then sprinkles, which is exactly why I'm so darn excited to share these onion rings with you.
I love fries with a burger, but give me perfectly crispy onion rings and I'm in heaven (insert tons of emojis.)
I'm pretty sure we can all agree that pretty much anything fried just takes something to the next level -- fried oreos anyone? But, I went ahead and added a healthy twist on a classic fried favorite and it takes just as good. I'm tellin' ya, you won't even be able to tell the difference.

Tomato. Basil. Mozzarella. Balsamic. There is nothing that beats that combination. It's amazing how such simple, fresh ingredients can create such a flavorful dish.
There is nothing that beats the tomato, basil and mozzarella combination. Am I right? In celebration of the re-design, I whipped together our favorite dinner to celebrate.
If a meal has "caprese" in the title, I want it. It is amazing how such simple, fresh ingredients can create such a flavorful dish.
